ABC Celebrating Dick Clark on New Year's Eve

NEW YORK — ABC is turning its first New Year's Eve without Dick Clark in four decades partly into a celebration of the showbiz impresario's life.
Clark, who originated the annual "New Year's Rockin' Eve" special in 1971, died at age 82 in April. Fergie and Jenny McCarthy will be hosts of a two-hour tribute to Clark that will air at 8 p.m. ET on New Year's Eve.
ABC said Wednesday that Ryan Seacrest will host the countdown show from Times Square, with Taylor Swift, Carly Rae Jepsen, Neon Trees, Flo Rida and Pitbull among the musical guests. Seacrest hosted the past few years with Clark making short appearances. A stroke had diminished Clark's communications skills.
Al Green, Helen Reddy and Three Dog Night performed at Clark's first New Year's special.

Here are some fun ideas to have your own New Years Eve Celebration...


We usually keep it simple but fun, we get the box that has all the party hats and poppers in them noisemakers are always fun.  hand some curling ribbon from the door ways, sprinkle some confetti around on the tables. Sparkling cider or grape juice makes it fun for the kids and the adults who do not drink. We have a special dinner whatever we all chose, have hours of special movies lined up and from time to time peek at Dick Clarks rockin New Years Eve.  We have fun snacks  and when the time draws closer we put on our hats, and get ready to count down with Dick Clark. 10..9...8..7..6...

Can't get to New York, but always wanted to? Bring the lights and ball of New York to your home this year! Using black butcher paper, make the New York night skyline with plenty of skyscrapers. Line the walls with your own personal New York skyline. Use strands of white lights and poke them through the skyline periodically to make a sparkling night sky. Also use a disco ball to hang from the ceiling to give off the effect of your own New York ball drop.
Enjoy appetizers, plenty of wine, and music to enjoy a fun night of dancing, visiting, and spending time together. At midnight, watch the ball drop and include plenty of noisemakers, confetti, and hats for all of the partygoers.
Black Light Party...
For a unique party experience, consider a black light party with plenty of glow sticks, music and fun. Black out windows with blackout curtains or black paper to avoid light coming in, and change all of your light bulbs to black light bulbs. To really give off a black light effect, drape walls in plenty of black if you can. You can also add strobe lights for a unique and different effect.
Enjoy dancing to music with a DJ or to prerecorded tracks. Consider renting games from party planners like black light chess, Twister, and more. Have everyone wear white cotton tees if desired.
Casino Night...
Casino nights are always popular. Serve hor d' oeuvres and favors while guests play games like blackjack and poker. True casino night equipment like roulette and crap tables can be rented through party planners and party supply stores. Many times they even offer dealers at the tables.
You can have everyone dress up in old fashioned 20's style clothes for a vintage inspired evening, or just come in whatever as long as it includes the wearing of clothes.
Mardi Gras Theme...
Bring the excitement of Louisiana Mardi Gras home to your house. Stock up on a bunch of Mardi gras supplies from the local party store, cook up some good Louisiana cooking, and enjoy a fun night together as friends.
For food, serve up some King Cake. If you aren't able to make it, check with local bakeries or see if places in Louisiana might be available to ship it to you. See the link at the end of this article for more Mardi gras recipes and desserts you can make at home.
For activities, hand out free Mardi Gras necklaces, cups, and masks. Use Mardi gras music, lights, and flags to decorate your home and turn it into a party atmosphere. Have plenty of drinks and food on hand for partygoers.
Black and White Ball...
Turn your home into a beautiful ball with an old fashioned black and white masquerade ball. Have guests come dressed up in their finest and have dinner catered or include a nice black tie dinner for guests.
After dinner, push the furniture and rugs off the hardwood floors and bring guests in to dance to classical music. Hire a band or small orchestra if budget allows, and even a teacher to show guests how to dance.
Then let the ball begin! At the end, have a chocolate fountain and include dipping items like cakes, pretzels, and cookies to dip in the chocolate fountain. Then ring in the New Year with fancy champagne toast.
Get Into the Outdoors...
If you love the outdoors, consider heading out for a night of moonlight skiing, sledding, or a horse drawn carriage ride. You could even play snow football, or pull sleds behind ATV's.
Afterwards, head to the local ski lodge, or inside for a cup of warm hot cocoa and chocolate pie before ringing in the New Year bundled in blankets and sitting by the warm fire. If you're at your local ski lodge, see if they have any fun activities or parties planned and hit one of those shortly before midnight to ring in the New Year with other party goers.
If you live in warmer climate, consider a bike ride, or a game of night flag football. You could ring in the New Year outside by the pool, or snuggled in a hammock with your loved one.

Rachel Hollis New Year's Eve Recipes























 



Meatball Ingredients: 
2/3 of a pound of Ground Beef
2/3 of a pound of Ground Pork
2/3 of a pound of Ground Veal
1/2 Cup of Freshly Grated Parmesan
1/4 Cup of Finely Chopped Onion
1 Egg
3 Tbl of Italian Style Bread Crumbs
3 Pinches of Sea Salt
Freshly Ground Pepper
- The ingredients are really simple because a good meatball should actually taste like meat!

Directions:
1. Combine everything in a bowl and mix with your hands being very careful not to over mix your meat (this is how meat gets tough).

2. Now for shaping the meatballs. First grab a small amount of your meat mixture. Then roll the meat between your hands and cup it into the shape of a ball.

3. The finished product should hold together well (otherwise it'll fall apart while cooking).

4. If it seems too juicy, add more bread crumbs. Not holding together well? Add another egg.


There are various ways to cook your meatballs. Some chefs cook them in the sauce which allows the marinara flavor to permeate the meat. Some chefs bake them, undoubtedly the healthiest way to go. I on the other hand is going for maximum flavor and crispy outside, so I fry them...in olive oil. Ok, so not technically healthy BUT so darn good!

1. Fill a small pot with olive oil (about half way up).

2. Bring to a slow boil over medium high heat and cook meatballs in batches, rotating occasionally so all side are well cooked.

3. Make sure to check the center of the meatball to make sure it's cooked through before removing from the oil.

4. Once they're cooked through remove from the oil and place onto a paper towel to soak up the grease. Enjoy!!

Sparkling Cranberry Cocktail Recipe:
In a champagne flute, 1/3 cranberry juice, dash of sparkling water, and then 2/3 champagne (or for kids drinks sparkling cider) garnish with fresh herbs, fresh cranberries

Cristina's Pink Champagne Cookies






















 



Ingredients:
1 1/4 cups all-purpose flour
1 tsp. baking powder
1/2 cup sugar
1/3 cup shortening
Liquid red food color
1/2 cup granulated sugar
2 cups sifted powder sugar
Pinch of table salt
Pink Champagne

Directions:
1. Preheat oven to 375.

2. Line baking sheets with parchment paper.

3. Reduce champagne in a medium saucepan over high heat until it measures 3/4 cup, about 20 minutes.

4. Chill 1/2 cup reduced champagne; set 1/4 cup aside for the icing.


Whisk & Cream
1. Whisk together flour and baking powder in a bowl, set aside.

2. Cream 1/2 cup sugar, shortening and liquid red food color (if desired) in a bowl with a mixer on medium speed.

3. Gradually mix in 1/2 cup reduced champagne.

4. The shortening will look curled. Add flour mixture and mix until incorporated into a soft dough.


Scoop & Roll
1. Scoop cookie dough with a scoop (about 2tsp.).

2. Roll cookies in granulated sugar to coat.

3. Transfer to prepared baking sheet and gently flatten with the bottom of a glass or measuring cup dipped in sugar.

4. Bake cookies until edges are set, 12-15 minutes.


For The Icing
1. Whisk powdered sugar, the remaining 1/4 cup reduced champagne, and pinch of salt in a bowl until combined.

2. Dip tops of cookies into icing and let stand until icing sets.

3. Decorate cookies with cake sprinkles, decorating sugar, or pearlized sugar if desired.

Home made snow globes....




While watching the Home and Family show I  learned that the fluid that is in store purchased snow globes is toxic to your pets. I love snow globes and  learned a new way to make them at home that are very safe and cute.copyright © 2012 Crown Media, all rights reserved.


Homemade Snow Globes
























Ingredients:
Mason Jar (or any clear jar with a tight lid, large enough to fit your picture once cut out)
Glue Gun & Hot Glue
Scissors
Picture
Laminate paper (can purchase at any craft or office supply store)
Mini Styrofoam ball
Embellishment pieces (Suggested Embellishments: Mini Christmas Trees, Fake Berries, Mini Pine Cones)
Glycerin
Glitter
Water


Directions:
1. Take your picture and cut out the person. It is nice to use a full body rather than just 1/2 or a face.


2. Use your laminate paper pouch and laminate your cut out picture. Once you laminate, cut out your person again, but make sure to leave an edge around the picture so it stays sealed.


3. Unscrew the lid to your jar. I like to re-screw the lid back on to find out which direction will face a smooth surface on the jar before I start gluing.


4. With the mini Styrofoam balls, slide the picture into the ball so they can be glued and stand straight. Once you do this, seal the picture into the slit of the ball with some hot glue.


5. Next, glue the ball onto the lid of the jar, making sure the front of the picture will face the smooth part of the jar.


6. Take your embellishments and glue them around your picture to make a nice background scene. During this step, make sure to leave enough room around the edge of the lid so you can screw it back onto the jar.


7. Now you can fill your jar up, almost to the top with water. Then add your glitter.


8. Next adding glycerin to the water will help the glitter float a little bit slower. Usually about 2-3 teaspoons per cup of water.


9. Now you can stuff your design into the jar and screw on the lid.


10. If you want you can put some hot glue on the lid to seal it closed, but it's best to wait to seal it just in case you need to make any adjustments after you place it in the water.

If Santa was in NYC who was watching the elves?






I have never seen so many Santa's in my life and if Santa was here with Ms Claus who was watching the elves?  I think someone should have been watching Santa!   I'm not sure what little ones thought when they heard rowdy Santa in the streets.




 there were 20,000 Santas in NYC the day we were there.
We saw Elf see him on the right hand side

We saw a lot of  Ms Claus , reindeer, snowmen, even a tree that lights up and it wasn't in Rockefeller Center it was a girl who lit up.  I did not see one angel and I must say when I write Santa is letter I am going to ask him what he was thinking. :-)

Toys R us in NYC








Toys R us in NYC is huge and even has a ferris wheel that goes up to the ceiling. Very few stores in NYC are on one floor . I think the Motto in NYC is go big or go home!

Our trip to NYC







We left for the Golden Memories bus at 3:00 am fed all the little ones here so they didn’t think I had left without taking care of them. They consist of Sneakers the cat, Oscar my Maltese and the cute litte Dutch bunny who I like to call Cutie.  I was worried about my little blue parakeet who kept getting all big and puffy like he was cold or sick. (when we got home he was fine)
          We, my daughter Rachel and I packed up a pillow, blanket and some munchies for the 6 hour ride ahead of us.  Generally people chit chat to get to know each other for a while and then everyone just goes to sleep. We were awakened after out three hour cat nap to our first stop which was Tim Horton’s in Pennsylvania where you get to take a potty break and get coffee or a donut .   Then back on the bus we go to doze off again till we get to NYC at about 9: 30 ish. We usually wake up to the sunlight shining on our faces and people oooooing and ahhing  because we are going thru New Jersey and the sun is dancing across the water. Everyone is getting talking about all the fun things they are planning on doing for the eight or nine hours we will be visiting. Then as you enter the city the excitement is contagious!  The huge wonderful buildings....

Fun recipes to have when guests arrive..appetizer, dinner and desert

Ingredients:
4 green onions, cut into 1-inch pieces
1/4-cup fresh parsley leaves
1 small clove of garlic
1 package (10 oz.) frozen chopped spinach, thawed and squeezed to drain
1 slice Italian or French bread
1/2 cup grated Parmesan cheese
1 package (3 oz.) cream cheese, softened
1/3-cup mayonnaise
1/8-teaspoon nutmeg
4 ounces crumbled feta cheese
Toasted pita chips

Directions:
1. 
Assemble and attach food grinder attachment to mixer.

2. Turn to Speed 4 and grind green onions, parsley, garlic, spinach and bread into mixer bowl.

3. Grind bread last to clean out grinder body.

4. Add Parmesan cheese, cream cheese, mayonnaise and nutmeg.

5. Turn to Speed 2 and mix until combined, about 1 minute.

6. Stop and scrape bowl.

7. Turn to STIR Speed and add feta cheese, mixing just until blended, about 30 seconds.

8. Spoon mixture into baking dish.

9. Bake on lower oven rack at 350F for 20-25 minutes until hot and cheese is melted.

10. Serve with pita chips.



Tess Rafferty’s Holiday Sugar Cookies









Ingredients:
3 sticks of butter
1/4 cup of sugar
1 cup of confectioner sugar
3 cups of flour
1/2 tsp vanilla
1/2 tsp salt



Directions:
1. Cream together 3 sticks of butter, 1/4 cup of sugar, 1 cup of confectioner sugar, 3 cups of flour, 1/2 tsp vanilla and 1/2 tsp salt
2. Roll the dough into ball or log, wrap well in plastic wrap, refrigerate for 4-6 hours
3. Break off a ball of dough, roll dough out to about 1/2", cut into shapes
4. Bake at 325 degrees for 20 minutes
5. Cool before icing

Icing: 
1. In big bowl, mix together 1 box of confectioner sugar and milk
2. Add food coloring of your choice!



Cristina Ferrare's Silky Marinara Sauce
Serves 6-8 or makes 1 pound of pasta
Ingredients: 
1/3-cup olive oil
4 cloves garlic, peeled and smashed
2 cans (28 ounces each) chopped tomatoes
1 Tbsp. sugar
1/2 tsp. table salt
1/4 tsp. red pepper flakes
2 cups freshly grated Parmesan cheese
8 to 10 fresh basil leaves , rolled like a cigarette, then sliced thin (chiffonade)

Directions:
1. Heat a saucepan on medium heat. Add olive oil and garlic.
2.Saute garlic until it starts to turn a golden color. Be careful not to burn the garlic, or your sauce will taste bitter. If this happens, discard and start again.
3. Add the tomatoes, salt, sugar, red pepper flakes.
4. Turn the heat down and simmer for 25 to 30 minutes (For optional extra creaminess, stir 1 Tbsp. of unsalted butter into the sauce just before serving).
5. While the sauce is cooking, prepare water for the pasta.
6. Cook your pasta according to the directions on the package (this recipe will accommodate 1 pound of pasta).

Three important notes when cooking pasta:
I. Use pasta that is made with semolina flour for best results.
II. Make sure you salt the water (1 Tbsp. per 4 quarts of water).
III. Make sure the water is at a boil.

7. Cover to keep warm and set aside.
8. Drain the pasta. Do not rinse. Put the pasta back into the pot you boiled it in.
9. Remove the garlic from the sauce and discard (or you can spread it on some bread!)
10. Add 2 ladles of the sauce to the pasta and mix.
11. Pour the pasta into a pasta bowl.
12. Garnish with the Parmesan cheese and fresh basil.

This Christmas Elf is sure to make your family smile! Teddy Bear shaped cake is transformed using shaped cookies to build the hat, mittens and shoes.

Instructions:

In advance: Make cookies. Prepare and roll out dough. Use patterns to cut 3 hats and 4 shoes (reverse 2 shoes). Using mitten cutter from set, cut 6 mittens, reverse 3 for opposite hand. Using knife, cut 13/8 in. round pompom. Bake and cool all cookies.

Position bear cake on foil-wrapped board, cut to fit design with hat, mittens and shoes. Trim off ears, square off arms, legs, and trim muzzle and eyes. Lightly ice cake smooth in buttercream. Using toothpick, mark suspenders, belt, pant leg, stockings and facial features.

Using tip 16 stars, fill in shirt, pants and stockings. Pipe in tip 3 eyes, mouth and tongue; (pat smooth with finger dipped in cornstarch). Using tip 12, outline belt and fill in. Pipe tip 5 buckle; pat smooth. Build up ear area with tip 3. Cover face and ears and build up nose with tip 16 stars; overpipe cheeks.

Sandwich hat, shoe, and mitten cookies with icing. Position next to cake. Cover cookies with tip 16 stars. Pipe tip 366 pull-out leaf fringe. Add tip 21 pull-out star hair curl. Cover round pompom cookie with tip 21 swirls and position on hat.
Combine Lemon Yellow with Golden Yellow for yellow shade shown. Combine Brown with Christmas Red for brown shade shown.
